This is my hubby's favorite. He was amazed at how seriously good is was and that it tasted nothing like sweet potato!
I love dessert recipes hacks that are both decadent yet filled with wholesome ingredients! And this one is spot on if I do say so myself!! It will satisfy your chocolate craving while nourishing your body with Yonder Collagen.
It's great as a treat, snack or even breakfast!

Ingredients
1 cup cooked sweet potato
2 eggs

4 scoops Yonder Collagen
½ c almond butter
¼ almond flour
½ cup cocoa
½ c maple syrup (or sweetener of choice)*
1 tbsp butter or coconut oil
1 tsp vanilla
¼ tsp baking powder
A pinch of Celtic sea salt
½ cup chocolate chips (plus a few for on top)
½ cup chopped walnuts or pecans
Directions
Preheat oven to 350F.
Whisk eggs in a medium size bowl, then add all other remaining ingredients except the chocolate chips. (Stir in the chocolate chips after everything is well blended). (Optional - add in chopped nuts).
Pour mixture into a 9x9 baking dish lined with parchment paper.
(Optional) Add an extra chocolate chips and nuts on top and lightly sprinkle with the sea salt.
Bake for 30-35 minutes.
Let cool before cutting.

Recipe Note
*Sweetener Options:
I like to use Allulose sweetener when I do not want the added sugar from the maple syrup.
Another option is to use Yonder's Chocolate Collagen instead of the flavorless. When doing so reduce the amount of cocoa to a 1/4 cup.
