I am usually all about freshly milled flour and organic dairy (raw is a huge bonus!) products but my husband and I recently decided to shift our nutritional focus for a month and go gluten-free and dairy-free.

I have always had friends that need to follow these guidelines due to allergies so doing this for myself was an eye opening experience. It can be quite the challenge to do these elimination diets without heavily leaning on processed gluten-free foods and processed milk alternatives all while still trying to get enough protein.

This recipe packs a total of 37g of protein & is infused with Yonder's Flavorless Collagen. It is a nod to all that have allergies or want to try an elimination diet and do it the right way with whole, real foods! But hey, if this isn't you and you are still enjoying dairy, I've got you covered! I have simple alternate instructions for you. Enjoy!

Enjoy these waffles as part of your breakfast, along with eggs and bacon or with your dinner and make chicken and waffles - just omit the banana and cinnamon! 

Pro Tip: Make 2 or 3 batches, depending on the size of your family, and freeze some. We love to do this and then pop them in the toaster to reheat for a quick and easy breakfast or snack.

Ingredients

• 1/2 cup organic oats 

• 1/2 cup organic quinoa

• 1 cup of homemade cashew milk* (or dairy milk)

• 1 egg

• 1 banana, mashed (or use 1/4 cup coconut sugar)

• 1 scoop Yonder's Flavorless Collagen

• 2 tsp vanilla

• 1 tsp sea salt

• 1 tsp baking powder

• 1 heaping tbsp cinnamon

Directions

1. Blend the oats and quinoa in a high powered blender until you make a “flour.”

2. In a mixing bowl, add the flour, milk and egg.
   Let it sit for 5 minutes to thicken.

3. Meanwhile, heat up your waffle iron.

4. Then, add the remaining ingredients, mix well and you are ready to pour the batter.

5. Cook and top with maple or honey syrup + butter if you are including dairy.

Recipe Note

*Cashew Milk: Blend 4 cups filtered water with 1 cup raw organic cashews and blend on high power for 2 minutes. 

Note: Use cashew milk within 5-7 days.
