Ingredients

2 Tbsp. chopped onion
1/4 cup of red bell pepper – chopped
1/2 cup spinach
3 organic/cage-free eggs
1 Tbsp. coconut oil (optional)
2 Tbsp. of chopped avocadoDash of sea salt & pepper Dash of hot sauce (optional)

Directions

Sauté onion & red bell pepper in coconut oil in a frying pan on med-high heat.
Once tender, reduce heat to medium whisk eggs in a separate bowl add 3 eggs mixture to pan
Add dash of sea salt & pepperWhen eggs start to set, reduce heat to low and add in the chopped spinach.
Remove from heat once spinach has wilted.
Top with 2 Tbsp. of chopped avocado.
Sprinkle a dash of hot sauce on top (optional).
