I use a mix of organic cottage cheese and Greek yogurt for a balanced texture, but you can go all in with one or the other based on your preference. Easy to make and versatile, this parfait is a delicious treat for any time of the day, plus it has the added bonus of Yonder's Creamy Vanilla Collagen or change it up by using either the Chocolate or Flavorless collagen.
Creamy Vanilla Collagen Parfait
Creamy Vanilla Collagen Parfait is made with my favorite organic cottage cheese, (GOOD brand), Greek yogurt and our Creamy Vanilla Collagen. Ground flax, fresh berries, sprouted seeds, shredded coconut flake and Good Sam mini chocolate chips. I also love adding in grain free granola. The ingredients below are just guidelines! Allow your tastebuds to guide you. Be creative and enjoy!
While a true parfait is layered, for time sake I mix the cottage cheese, yogurt, collagen and flax together.
Then fold in the berries, coconut flakes, and seed/nuts. Top with mini chocolate chips and granola.
Note: When using the flavorless collagen make sure to add 1 tsp of vanilla extract.
You may also need to add some type of sweeter. I like to use a little honey or maple syrup.
