Now, let's talk chicken. This isn't your average bird. No, this chicken is marinated to perfection with a blend of flavors that's nothing short of magical. The marinade takes just minutes to come together—simple ingredients, a quick whisk, and you're on your way to flavor heaven.
And grilling this masterpiece? It's a breeze. The chicken hits the grill, and as it cooks, you'll brush it with a bit of that reserved marinade. The result? Juicy, tender, and packed with a punch of flavor that'll leave you wanting seconds, maybe even thirds.
So, here's the game plan: gather your ingredients, fire up the grill, and get ready to experience a dish that's a true celebration of taste and texture. Grilled chicken with a tasty mango avocado salsa—it's not just a recipe; it's a delicious adventure waiting to happen.
PREP: Trim the chicken breasts of fat and pound them to an even thickness to ensure even grilling. You can also slice them evenly in half widthwise for a quicker grill. Place the prepared chicken in a large resealable bag and set aside.
In a mixing bowl, whisk together three tablespoons of olive oil, lime juice and zest, cumin, chili powder, Tajin, minced garlic, honey, salt, pepper, and chopped cilantro. Reserve about 1/2 cup of marinade, and pour the rest into the resealable bag.
Marinate chicken for 30 minutes to an hour in the fridge. (However, you can marinate for up to 24 hours).
When the chicken is done marinating, take it out of the fridge and let it sit for 10-15 minutes at room temperature.
CILANTRO LIME CHICKEN
The instructions below are to grill the chicken. Lightly oil the grill grate or grill ridges on a grill pan or add 1 tablespoon oil to a skillet and then place the marinated chicken on the grill. Discard leftover marinade.
Grill for 10-12 minutes or until chicken juices run clear and internal temperature is at 165 degrees F. Flip the chicken halfway and brush it generously with the reserved 1/2 cup marinade.
MANGO AVOCADO SALSA
Mix ½ tbsp olive oil, 3 tbsp lime juice, lime zest, 1 tsp garlic powder and mix together. Set aside.
(OPTIONAL: When grilling the chicken, also grill the mango. Brush with oil and grill on one side for about 4-5 minutes at medium-high heat.)
Chop the mango, tomatoes and avocado into bite-sized pieces. Finely chop the red onion, cilantro and jalapeño, then add all chopped ingredients together and toss in lime juice & oil mixture. Season the salsa to taste with salt & pepper.
Recipe Note
Tip: I like to make a salsa before I start cooking my chicken in order to allow time for all the flavors to marinate together.
