What makes this recipe so special? It’s pure comfort food—with none of the junk. No white flour, just coconut flour and shredded coconut, pasture-raised eggs, and a crisp golden finish from cooking in coconut oil. A squeeze of fresh lemon over the top adds a zing that’s downright addictive.

It’s one of those meals you can whip up in minutes with pantry staples. I nearly always have lemons, eggs, and chicken on hand, along with coconut flour and shredded coconut stored in my freezer. My kids love it, guests rave about it, and I love that it’s healthy, fast, and totally satisfying!
