Yogurt bowls and smoothies are my typical breakfast staples...after my chocolate collagen coffee of course! But the fall weather occasionally makes me want a warm breakfast, and organic oatmeal fits that bill nicely.I always encourage my clients not to eat “lonely carbs” since that can create a blood sugar spike and invite in food cravings. For this reason, when I do indulge in oatmeal, I add Yonder’s Flavorless Collagen to boost the protein of my bowl.

Adding a source of healthy fat too, like grass-fed butter or a little coconut oil, is also a great idea.To give traditional oatmeal a fall twist, I am adding cranberries and pumpkin seeds. It’s a fun seasonal variation of typical toppings like nuts and raisins, but you could certainly add those too! Cranberries are a great source of vitamin C and other antioxidants. Of course, dried cranberries typically have a bit of sugar on them, so I use them sparingly. You could top with real cranberries if you enjoy the tartness.I eat pumpkin seeds almost every day because they are a fabulous source of zinc, fiber and omega-3s. They give dishes like yogurt bowls and salads a delightful crunch, and they are a perfect addition to this fall oatmeal too!

Protein-Packed Fall Oatmeal Recipe

Ingredients
- ½ cup dry oats
- 1 tsp butter
-
1 scoop Yonder Flavorless Collagen
- 2 Tbsp dried cranberries
- 2 Tbsp pumpkin seeds (pepitas)
- Honey to taste (if desired)
Directions
Cook oatmeal in 1 cup of pure water
Add butter (if desired) to hot oatmeal and stir to melt
Add Yonder Collagen and stir well to combine
Top with dried cranberries and pumpkin seeds and add a drizzle of honey
