Ingredients
1 cup organic peanut butter (creamy or natural, unsweetened)
Make the Filling: In a medium bowl, mix the peanut butter, Yonder chocolate collagen, and maple syrup until fully combined and a thick dough forms.
Shape the Eggs: Using a small cookie scoop or your hands, form 1 to 1.5-inch balls, then press into egg-shaped patties. Place them on a parchment-lined baking sheet.
Freeze: Transfer the baking sheet to the freezer for 20–30 minutes, or until the eggs are firm and easy to handle.
Melt the Chocolate: While the eggs are chilling, melt the chocolate chips and coconut oil together in a double boiler. (Or use a makeshift double boiler by placing a heat-safe bowl over a pot of simmering water, ensuring the bottom of the bowl does not touch the water.)
Dip in Chocolate: Once the chocolate is melted and smooth, remove it from heat. Using tongs, dip each peanut butter egg into the chocolate, coating it completely. Place each dipped egg back on the parchment-lined sheet.
Chill to Set: Place the dipped eggs in the refrigerator for 30–60 minutes, or until the chocolate is fully set.
Store: Keep the eggs in an airtight container in the refrigerator for 7-10 days (or freeze for longer storage.)
