These protein ball are packed with collagen, healthy fats, and so much more nutrition than any store bought protein or granola type bars. No extra additives, preservatives, or artificial anything!! You will feel so good about feeding this healthy snack to you & your family!
Ingredients
12 dates, pitted
3½ cups of nuts of choice.
(Walnuts, macadamia, or pecans are all good options. Or you can even do a mixture).

1/2 cup of flavorless collagen peptides
3 tablespoons of coconut oil
1 cup of blueberries (fresh or frozen)
1 cup of shredded coconut
Directions
In food processor (I LOVE the Cuisinart Food Processor), blend dates until they are pasty & are into clump, about 55 seconds.
Add nuts and blend until finely chopped, about 50 seconds.
While the blade is still running add the coconut oil and collagen peptides. The paste should be nice and creamy now, like dough.
Scoop out paste and put into a large bowl, stir in ½ cup of shredded coconut, then fold in the blueberries.
Roll dough into balls and line up on a plate.
Take another plate and spread out the rest of the shredded coconut and roll the balls over the coconut until covered.
Pop them in refrigerator to keep cool and to harden them up a bit.
Keep stored in refrigerator.
