How to Make Sugar Free Collagen Fudge
Back to the fudge! This was so simple to make and is absolutely delicious. If you don't like mint you have a couple of options. You can still dye the top layer green (or any color you like) and leave the mint flavor out. Or, simply double recipe for the chocolate fudge for a traditional keto chocolate fudge.
While the recipe was developed to have a full serving of collagen in every square, you can make these very festive by cutting them into fun shapes with a cookie cutter. You can use your kitchen scale to figure out how much of a serving your cutter produces.
Simply weigh the entire recipe before cutting, it should be lose to xx grams. Divide this number by 16 and that gives you the equivalent to this recipe at 10 grams of collagen per serving. My servings were about xx grams each. Cut one of your cookie shapes and weigh to gauge the amount of collagen per serving in the new shape.
Since mint chocolate fudge tends to be a Christmastime treat, I like using this mini Christmas tree cutter that measures about an inch and a half. You can go larger or smaller of course, but this one best approximates about half a serving.
